Undergraduate Modules | Cereal Science (FS344) Food Packaging (FS414) |
Research Profile: | Marena Manley joined the Department of Food Science in 1997 and currently holds the position of Full Professor. Her research focuses on the application of near-infrared spectroscopy and hyperspectral imaging, primarily in the analysis of grains. More recently, her work has expanded to cover a diverse range of food-related topics, including honey adulteration, sourdough maintenance, chocolate refining and tempering, and the characterisation of gummy candy. She employs advanced multivariate data analysis techniques, with a particular emphasis on exploratory ANOVA-simultaneous component analysis, to interpret the effects of controlled experimental factors on spectral data within full-factorial experimental designs. |
